The importance of water temperature

To avoid damaging the matcha leaves, we recommend not exceeding a temperature of 80°C. Water between 70°C and 75°C is ideal. If it is too hot, your drink may become bitter. If your kettle does not allow you to set the temperature, we recommend letting the water cool slightly once it has boiled.

Usucha for a mild, light matcha

This is the most widespread method in Japan, inspired by the Enshū school.

  • Pour 1 teaspoon of matcha (around 2 g) into a bowl using a chashaku (bamboo spoon).
  • Add 75 ml of hot water (between 70 and 80°).
  • Hold the chasen (bamboo whisk) with two fingers and mix the matcha by moving your forearm. Foam and bubbles will form.
  • Break up the bubbles on the surface by mixing more slowly.
  • Make a Z on the foam and lift your whisk in a vertical motion.
  • Take the time to enjoy your matcha in a cup or bowl specially designed for this purpose.

Koicha for an intense flavour

Using this method, you will enjoy a thicker drink containing a greater quantity of matcha tea.

  • Pour 3 spoonfuls of premium matcha (between 3 and 5 g) into a bowl or cup.
  • Add one tablespoon of hot water (between 70 and 80°).
  • Mix everything together with a chasen.
  • Add another tablespoon of hot water.
  • Mix again, without whisking, in a figure-of-eight motion.
  • Make sure you achieve a smooth, bubble-free texture.
  • Drink: you will experience the full flavour of matcha on the palate.

How do you make smooth matcha tea without a whisk?

  • Add 75 ml of simmering water at 75°.
  • Blend everything together.
